Super ugly dining room, super cramped dungeon of a kitchen but wow the creativity and chops that were happening back in the day were show stopping. Marcus is supremely talented but his CDC Nils Noren was the glue and force behind so much that went down. How about this, on my last day of work I stood at the pass with chef Nils and he cooked a 12 course meal for me that I ate at the pass with him as he expo’d. The stuff of dreams…wagyu thinly sliced and draped over a taro puree where truffle tea is poured over table side…sigh!
