Run by master Chef Tong He Hew, this is Hakkasan’s attempt to get 2 michelin stars for doing high end Chinese food. Their roast duck and lobster with supreme sauce was epic. Interesting to see how they were cooking food traditionally and plating in a modern fashion. The cooks were open to talking with me about techniques and organization.
