Naomi Duguid lead this group through some great exercises in learning some of the sub genres of Thai regional cuisine. Often overlooked, the Shan people of Northern Thailand and Burma have created a cuisine so nuanced and refined that I, once again, was completely humbled by the world of food. We spent time cooking up in the town of Fang near the Burma border as well as around Chiang Mai.
