Once I ate my first Beijing duck I had to find out how that process was done so during the pre opening of the Park Hyatt I spent lots of time training at the sister hotel, The Grand Hyatt. The process to make a proper Beijing duck is fascinating and labor intensive but the end result really showcases the duck in the most elegant way.
