The traditional Japanese restaurant at the Grand Hyatt Tokyo. Chef Nezasa is a master chef and was surprisingly open with this gaijin. I spent some days here when matsutakes were in season. Shaving katsobushi, making fresh dashi-basting the mushrooms with it and grilling over binchotan charcoal…what elegance and refined simplicity.
