Chicago, Illinois

So I met Grant Achatz while at the French Laundry and when I passed through Chicago to do this month of stages I called him and asked if I could spend some time. This was before Alinea so his food was still grounded in a more traditional vein and therefore more appealing to me. I remember a chilled sweet pea soup with eucalyptus ice cubes…stellar!
