Hyatt Regency

I was part of the opening support staff of this behemoth of a hotel. Its like an offshoot of the kremlin on the outskirts of Beijing….crazy weird experience but I did get to see some great Chinese food being prepared. The pork stuffed eggplant was something I managed to eat for my lunch every day!
